30リットルの沸騰させた水からアクが出るように、
デザート用スプーンで3杯の苛性ソーダを入れる。あるいは
2リットルのカバの木を焼いてできた灰を入れ、
7リットルの沸騰させた水を入れる。
アクができたら冷やして先の魚にかける。その後
あなたがどれだけ魚を「ゆるく」したいかに応じて
24~36時間置く。アクに長時間晒すほど魚は「ゆるくなる」。
出来上がったら冷たいところに魚を置き、1,2日ほど水を掛けよう。
